For some reason, the words “Let’s try Chaufa” triggered a red button in the head of a thirteen-year-old, and picky eater like myself.

When the Chaufa dish arrived, I thought, “Joder, this is arroz chino; aaah, I’ve had fried rice before!” (Tranquila, you are safe, I told myself.)

But, no, it wasn’t just simple fried rice. It was better than that!

Consider this: When you eat a Peruvian dish, you are enjoying cuisine from four different continents. Peruvian cuisine is one of the most diverse in the world, with 491 traditional dishes, making it the world’s gastronomy with the most traditional foods.

This magnificent cuisine (which is blessed with a monstrous variety of tubers in the land) ranks first in terms of originality.
