Cocina Maya Mexican Grill & Mezcaleria introduces a Mayan Cuisine, an ancient cuisine has stood the test of time. Renowned for its flavor and variety, this cuisine still evokes flavors of its ancestor culture.

Many restaurants find inspiration by traditional Mayan cuisine; however, you may not find that many restaurants in the area of Orlando.  Luckily for us, one of our favorites is Cocina Maya Mexican Grill and Mezcaleria (website), where we were invited last weekend.

At Immers3d Magazine we always on the look out to enjoy tasting something new and this restaurant’s name reflects its inspiration.   All the dishes go according to recipes that have been passed down through the generations but with a better twist.

If you’re looking for an authentic Mexican dining experience, Cocina Maya Mexican Grill & Mezcaleria is definitely worth a visit!

In this article, we want to present the dream of three people. Their great vision and inspiration that reflects in their restaurant, full of kindness and a tasty cuisine. We have not seen the originality that Cocina Maya Mexican Grill & Mezcaleria has, anywhere!

The owners, Gustavo, his wife Yesenia and his brother-in-law Mauricio invite you to find out more about the concept of their restaurant Cocina Maya Mexican Grill and Mezcaleria.

We would like to highlight the design, so we like to say that the restaurant is beautiful.

The design is modern, clean, and minimalist but with details that give it a sophisticated touch. There are no piñatas here, no absurd decorations such as little flags, no prominence of red or orange.

The walls are gray giving it a broader and less distracting touch for the eyes. The restaurant also incorporates small natural elements such as wood, and an organic wall that highlights the entrance.

Flavoring the food at Cocina Maya Mexican grill & Mezcaleria.

After showing us around the restaurant, we sat down. We ask Gustavo to tell us a little bit about rhe dishes that really highlight the place’s cuisine.

“I’m going to give you a taste of one of the best melted cheeses like our Queso Fundido Molcajeteado. A table side presentation where we melt and flambé our Monterrey Cheese with mezcal and we serve it in a volcanic stone”

Shortly after, Gustavo stands with a garridon ready to show us how do they prepare the dish in front of customers.

What a great presentation!

As customers where coming through the door, everyone stared at the mezmerizing way, the cheese melt up and down.

Gustavo kept on puring mezcal  soon after, it was not a surprise to see the same presentation at other’s people’s tables.

Moreover, as we are eating tacos of this cheese, another popular dish came along to our table.

Introducing the Pulpo Maya.

What is the secret to this Pulpo Maya recipe Gustavo? 

The adobo is like al Pastor. We prepare it with a combination of pineapple juice, orange, dried guajillo chilies, garlic, oregano, pepper, salt just to mention a few spices. We blend it  until obtaining a smooth paste. After, we cover the octopus and let it rest for several hours.

What would you say is the richest food in Yucatan?

Cochinita Pibil. This dish is originally from the Yucatan Peninsula, but today it’s used throughout Mexico.
The Cochinita Pibil (a delicacy) was first cooked by Mayan Indians centuries ago to celebrate Lent/Easter season when they would consume protein rich meat dishes without grains or legumes.

What does the Cochinita pibil contain?

La Cochinita Pibil is a stew that is prepared with shredded pork. This meat is marinated in achiote, sour orange juice, habanero chili, salt and pepper. It is then wrapped in banana leaves and cooked in the oven.

We savored each dish with great enthusiasm. Without a doubt, the food is delicious, with a different touch and it shows that it is of very good quality.
